I'm a baking machine!!!

I know my sister and my mom are probably laughing at this blog post right now but I have been baking today. Rick's parents are coming over for dinner after church tomorrow. They are dessert people. I mean, after every meal we have with them, it's dessert next! And I mean right after dinner! Last time they were at our house, I didn't have anything prepared (we had gone out to a restaurant and came back to the house afterwards). Rick's dad was joking when he left about next time at least having ice cream for him. I thought it was funny. So anyway, Peggy is bringing the main dish so I wanted to at least make a homemade dessert. I've been in the mood for a fruit cobbler kind of dish. Don't ask me why....I don't know when was the last time I even had anything like that. So I began my quest. I made a blackberry cobbler. I know what I did wrong to that one! The recipe just said to use a baking dish and didn't give the size. Well, the one I used was too big so the fruit and cobbler spread out too much. I took it out 20 minutes earlier than the time was set for and it was still crispy around the edges. But we had a quick taste just to make sure it was ok and it tasted great.

Well, I then moved on to "Blueberry Buckle" which is some kind of blueberry coffee cake with a crumb topping. So I made a couple of those. They look really good.
I don't know what's gotten in to me but I've been in the baking and cooking mood lately. We'll see how long it lasts!
