Peach Cobbler

I did it! I made a peach cobbler! I had never made it before but I had some of those wonderful peaches from the produce farm and I wanted to use them before they went bad. Also, I just found out, after almost 22 years of marriage, that Rick loves peach cobbler. I seriously do not remember ever knowing that about him. So, I found a recipe that I tweaked with my mother-in-law's help. It turned out so good. So I thought I'd share it with you.
Peach Cobbler

Crust Batter:
2 cups milk
2 sticks butter
2 cups sugar
2 cups self-rising flour

Fruit filling:
4 cups peaches (or you can modify with another fruit)
1 1/2 cups sugar
2 T. flour
1 stick butter

Crust batter:
Melt butter in a microwavable dish. Pour sugar and flour into a mixing bowl, whisking in milk. Mix well. Then, pour melted butter into flour mixture and whisk it all together. Pour into a well buttered baking dish.
Fruit filling:

In a saucepan, melt 1 stick butter. Mix the sugar and flour together, then add to butter, stirring over heat until well combined. Stir in peaches and cover with water. Bring to a boil, dissolving sugar. Pour or spoon peaches into baking dish evenly over crust batter, juices as well. Sprinkle lightly with sugar. Bake in a 350 degree oven for 1 hour or until golden and bubbly.

Serve with vanilla ice cream if desired!

  1. Are you trying to torture us with your tantalizing desserts! I also wanted to comment on the Red Velvet Cake mentioned a few posts back. I was thinking that maybe someone (meaning me) outside of your family should have that recipe in case for some horrific reason your entire family died in a tragic plane crash. And for no selfish reason at all, I just want to be able to keep your family treasure alive.

  3. Yeah....the Red Velvet Cake....now that's a recipe to want! Unfortunately, that one is top secret. Oh, there's been other recipes I've seen but none of them taste like the recipe my mom and sister have. I think that one is under lock and key! My personal favorite!
